Texas Christmas Dip
8 ounces cream cheese
1 cup sour cream
1 large jalapeño - seeded and minced
1 large roasted red pepper - minced
1/2 teaspoon seasoned salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 cup white cheddar cheese - shredded
Mix everything together in a medium bowl. Refrigerate for at least one hour.
Makes 8 servings
Maryland Hot Crab Dip
8 ounces cream cheese
1/3 cup sour cream
1/4 cup mayonnaise
1 cup cheddar cheese - shredded
1/2 cup Monterey Jack cheese - shredded
12 ounces lump crab meat
1 teaspoon Old Bay Seasoning
2 teaspoons Worcestershire sauce
2 large green onions - minced
1 large clove garlic- minced
1 teaspoon Dijon mustard
1/4 teaspoon cayenne pepper
1/2 teaspoon seasoned salt
Heat the oven to 325°F.
Mix everything in a one quart casserole dish.
Bake for 30 minutes
Makes 16 servings
Spicy Mexican Corn Bites
2 cups frozen corn kernels - defrosted
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon lime juice
1 teaspoon chili powder
1/2 teaspoon smoked paprika or regular paprika
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
3 tablespoons Cotija cheese or other Mexican Cheese
3 tablespoons vegetable oil
In a large bowl mix the mayonnaise, sour cream, lime juice, chili powder, cumin, cayenne pepper and cheese.
Add the corn and mix well.
Heat the oil in a nonstick skillet over medium heat. Spoon batter by teaspoons full into the pan.
Cook for 2 to 3 minutes.
Makes 4 servings
Olive Salad
10 ounces green olives - chopped
6 ounces black olives - chopped
1/2 cup giardiniera - chopped
1/4 cup pepperoncini - chopped
1 teaspoon dried oregano
2 large cloves garlic- minced
1 small roasted red bell pepper - minced
1/3 cup olive oil
2 tablespoons red wine vinegar
2 large green onions - minced
In a medium bowl mix the green olives, black olives, giardiniera, pepperoncini, red bell pepper and green onions.
In a small bowl mix the oregano, garlic, olive oil and vinegar.
Add the dressing to the olive mixture and toss to combine.
Makes 16 servings
Bacon Cheddar Deviled Eggs
3 slices bacon - cooked and crumbled
1/4 cup cheddar cheese - shredded
6 large hard boiled eggs
1/2 cup mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/8 teaspoon paprika
Peel the eggs and slice in half horizontally.
Put the yolks in a small bowl. Add the bacon, cheese, mayonnaise, mustard, salt and pepper. Mix well.
Spoon the yolk mixture into the egg whites. Sprinkle with paprika.
Makes 12 appetizers
